Since they do not use any additives such as preservatives or chemical seasonings, you can eat it safely and securely. You can also enjoy the natural taste of plums without losing any of the wonderful benefits that plums originally have.

They are committed to natural manufacturing methods, and each and every step of the process, from removing the bitterness from the plums, pickling them in salt, drying them in the doyo period, and pickling them in shiso leaves, is done carefully by hand.

■Perfect Salt Concentration
Made with a salinity of 13%, which was arrived at through repeated trial and error.
General seasoned plum products cannot be stored for long periods of time without the additives, or are made without additives and with a salinity of around 20% instead. There are also an increasing number of low-sodium products, but since the plums are pickled in a high salt concentration and then desalted and washed with water, the nutrients that the plums naturally contain, such as citric acid, are lost.
This product, on the other hand, is made using a unique manufacturing method that takes advantage of Gujo’s cool climate, and is made with the minimum salt content that prevents mold from growing even without the additives during salting, and a salt concentration that preserves important nutrients without removing excess salt.

■Uses Water Selected as One of Gifu’s 50 Best Waters
One of the Gifu’s 50 best water from Amijaganotaki Falls is used to remove the bitterness.
Gujo City is a city of water, surrounded by the clear waters of the Nagara River and its tributaries that flow from the Hakusan mountain range. The calcareous soil acts as a natural filter, producing naturally delicious water. They use this natural water to remove the bitterness by soaking it in running water for two to three hours.
