■In Sakai, where more than 100 breweries prospered in the Taisho era, but sake production stopped in 1971, local sake was revived for the first time in 44 years.
■The famous local spring water from Mt. Kongo is used as brewing water.
■We recommend drinking it cold, at room temperature, or lukewarm.
■It has a slightly sweet taste that brings out the rich flavor of the rice, and has a calming, refreshing taste.
■It goes perfectly with healthy low-sodium dishes such as dashimaki eggs and cabbage rolls.
